In celebration of Easter you have to try this amazing Carrot Soup recipe: - 6 carrots, peeled - 1 onion, chopped - 2 leeks, white part only, chopped - Fry together in olive oil - 2 C vegetable stock - pinch salt - pinch white pepper - pinch tumeric - pinch coriander seeds, ground - 1/4 C coriander, fresh, chopped, add at the end Blend until smooth. Salsa Verde to serve: Coriander, parsley, lemon juice, olive oil, salt and white pepper. Let us know what you think!
