In celebration of Easter you have to try this amazing Carrot Soup recipe:⁣ ⁣ - 6 carrots⁣, peeled⁣ - 1 onion, chopped⁣ - 2 leeks, white part only, chopped⁣ - Fry together in olive oil⁣ - 2 C vegetable stock⁣ - pinch salt⁣ - pinch white pepper⁣ - pinch tumeric⁣ - pinch coriander seeds, ground⁣ - 1/4 C coriander, fresh, chopped, add at the end⁣ ⁣ Blend until smooth.⁣ ⁣ Salsa Verde to serve:⁣ Coriander, parsley, lemon juice, olive oil, salt and white pepper. ⁣ ⁣ ⁣ Let us know what you think!
